Magali is a smallholder farmer who grows cereals organically and processes them into flour herself. Wheat, rye, spelt – her “nounouilles” are made from heritage varieties that contain less gluten. Everything is produced from start to finish and then shaped by hand.
A range of pasta varieties is available from the AMAP (Association for the Preservation of Small-Scale Farming):
- semi-wholemeal wheat pasta
- spelt and rye pasta (a blend of wheat and rye)
- spelt flour pasta
