The Moulin de l'Epinay in La Chapelle-Saint-Florent makes flour the old-fashioned way, using its wings and stone millstones.
This slow, ancestral technique produces a stronger flour that is richer in vitamins, minerals and micronutrients, as it retains parts of the grain's skin (minerals) as well as its germ (proteins). The grains they use are organically grown and they bag all their production by hand!
