Our story is that of two people who are passionate about great wines (my partner and I) and, more specifically, Chenin, who decided to take the plunge and create an estate to (finally) make wine.
The first plots were adopted in 2013, taken over in 2016, converted to organic farming in 2018 and the first wines were finally available in 2018, but... We wanted them to age and improve and we still had to mature them and wait until 2021 to have them.
So we wanted to make wines that reflected the quality of the wines we loved.
We left nothing to chance, so we decided to :
- to age all our wines for a long time (the whites for at least 2 years in barrels, then 18 months in our tuffeau cellars, the 2019 reds are still in barrels...)
- to use an experienced winemaker/cellar master
- to choose our plots meticulously (via surveys) (we are next to the Rougeard plot in Brézé)
- to be more organic than organic
- being in total harmony with nature (we have a large population of bats and roe deer) and a beautiful wooded area that brings a lot of freshness to our plots
- to be ahead of the game (we've invested in a straw blower and tried out blanc de noirs).
