At the local café, the conductors of the orchestra are the waiters. Between short steps and long strides, they set the pace for the day. A cup here, a glass there, always at the service of the customers, they twirl, dance and twirl across the tables, to the point of losing their heads, to the point of “yo-yoing” the coffee pot!
